3 Ingredient Oatmeal Cookie
My first order of business was baking cookies that were still yummy! Enter the three ingredient oatmeal cookie! All you need is a ripe banana (brown is best), oats, and sunflower butter.
I like to mix it up by adding dried cherries or cranberries (or nuts and chocolate chips if you can). If I'm really craving something sweet, I'll add a little honey. For how great these taste, they are surprisingly easy to whip up.
I'm not a fan of blogs that have a ton of chit chat before I get to the recipe, so I'll cut straight to the beef.
Simply mash your bananas, mix in your oats, and sunbutter! From here, feel free to get creative, as this recipe is not at all temperamental. For this batch I didn't have dried fruit on hand, so I folded in blueberries.

Ingredients
- 2 ripe bananas, mashed
- 2 cups oats (I like old fashioned)
- 1/4 cup SunButter
Optional
- 1 tbsp honey
- 1/3 cup dried berries
- 1/3 cup chocolate chips (Enjoy Life are dairy, nut & soy free. My favorite when I can have chocolate)
Directions
- Preheat oven to 350°F & line cookie sheet with parchment paper.
- Mash bananas in a large bowl. Add in the oats and Sunbutter mix well to combine. Fold in any of the optional ingredients.
- Scoop 2 tablespoons of the mixture onto your cookie sheet and shape into a large round about 1 inch apart, no need to worry about these spreading. If you like a chewy cookie, leave these a bit thicker.
- Bake for 12-15 minutes until the cookies are golden on top and just set to the touch.
- Remove from the oven and allow to cool for a few minutes before transferring to a wire rack. Store in an air tight container. Enjoy!
